Kisumé is a pure obsession with beauty. Kisumé is a contemporary experience that’s built on duality. It’s where the traditionalist and the modern artist meet. Our cuisine draws on the purity of Japanese food culture and injects it with a uniquely Australian sensibility. Here, each visit will be different from the last: Kisumé is a journey that constantly evolves. Find us in the heart of Flinders Lane, and discover three levels of dining. Our modern sushi bar and restaurant sit in the basement and ground floor, while Kuro Kisumé sits discreetly on the first level. Kuro, our most bespoke experience, encompasses The Table, two private dining rooms, an elegant Chablis bar and Winewall specially-curated by Philip Rich. Kisumé’s philosophy is built on the belief that true dining should be an honest representation of the land and waters that surround a restaurant. The seasonality of Australia’s land and seas forms our menu, day-to-day. Senior Executive Chef K.S. Moon and Executive Shaun Presland – a local master – represent 50 years of combined experience. The Hatanaka brothers, Yosuke and Shimpei bring their mastery from Tokyo and Kyoto to head our sushi bar. Chef Moon embodies Kisumé’s respect of providence. He selects Kisumé’s daily fish one-by-one, evaluating each for freshness, for size and for “spirit”. While our story is about food, there are other sides of Kisumé to explore. Inside, we fuse together the realms of design, art and dining into a unique experience across all three levels. Throughout Kisumé, we invite you to experience striking and emotive works from famed photographers Nobuyoshi Araki and Polly Borland. Designed by renowned architects Wood Marsh, Kisumé’s clean lines veer toward minimalism, pulling back the mood and heightening the senses for a journey not quite like any other.
